Cupping Evaluation
Cupping Details
Maple and malt in the nose. The body is medium in weight and smooth overall with a slightly bittersweet nutty finish. Tropical fruits, lemon, and apple push to the front of the cup, being supported by a medium intensity brown sugar sweetness. Bitter undertones of dark caramel and cardamom round out the experience.

Brewing Evaluation
Brewing Details
Quite sweet aromatically, with vanilla and brown sugar shining. This coffee has a very full and juicy body, rolling over the palate seamlessly. The acidity is well rounded and juicy with hints of plums and stone fruit. Brown sugar and dates add a complimentary sweetness of medium intensity. A resinous and tannic bitterness adds to balance and it finishes clean with baking spices like nutmeg and cinnamon.
