Cupping Evaluation

Cupping Details

Lovely aromas of baked raspberry and tropical fruits greet us at the break. The body is really juicy, lush and round. Once we get into the flavors, the acidity overtakes the experience with tart tropical notes, tangy stone fruit and tomato. An underlying sweetness is just detectable and quite clean. Complexity comes in the form of a pleasing dark caramel and tannins. The aftertaste lingers with a tart glow of fruit and herbs.

Brewing Evaluation

Brewing Details

In the nose, this coffee is delicate with florals and a caramel sweetness. The body is light and juicy on the tongue. Again, the acidity reigns supreme with tart citrus notes throughout the experience. Its mellow sweetness bridges into florals quickly followed by dark caramels and milk chocolate. The finish holds steady with tart fruit and dark caramel notes. This coffee is: Tart - Clean - Caramel

Native Coffee Roasters

Spent the last 5 years teaching myself to roast in a dingy warehouse in Queens NY. Have a small local following, Worked up to a probat p12 and just starting to put myself out there now. Excuse the short response, I'm on my phone.
