Cupping Evaluation
Cupping Details
Sweet maple and baked apple fill the nose, giving depth to a light and delicate body. The mouth feel is slightly thin at times, though refreshing to the senses. The sparkling acidity is mild in intensity, but impressive in its character with flavors of white grape, tropical citrus, and grapefruit. Subtle sweetness of dark, rich caramel and honey are balanced by hints of cocoa in the clean, crisp finish.

Brewing Evaluation
Brewing Details
Aromas of marzipan and chocolate give way to a creamy and smooth body of medium weight. A lightly intense malic apple acidity is noticeable on the front of the tongue, and quickly rolls into the sweet notes of apple pie and brown sugar with a candy-like sweetness coming through at times. There is a pleasantly dark and lingering essence of cocoa and graham cracker that becomes nutmeg, cinnamon, and dark chocolate in the finish.
