Cupping Details

Surprisingly fruity, we smell lemon drops with low tones of chocolate. The body is coating and full, reminiscent of a heavier red wine. Consistent with the aroma, the aciditiy is the dominant feature with a snappy lemon mellowed by a more mallic pear or apple tone. The sweetness is lower in intensity, leaning towards malt and honey. Lower still is the bitterness in the cup- mostly fruit skin tannic tones and little dark chocolate. The finish is sweet and dry like dark caramel and red wine tannins.

Brewing Details

The aroma is richly sweet reminding us of baking bread and caramel. The body is nice: clean, smooth & juicy. In the flavor, the highest tones dominate with bright lemonade and raspberries, anchored a bit with sweet maple and caramel and some floral hints. Chocolate and nuts round out the lower tones, reminiscent of a Darjeeling tea. The finish is mostly dominated by a tart orangey glow with a little dark caramel sweetness.
