Cupping Evaluation
Cupping Details
Bright and fruity in the nose, with complexites of caramel, raspberry, raisin, and floral elements. The body is juicy and full, though a little sticky on the palate. Pleasantly bright acids are up front in the form of clementine, apricot, and white grape. Sweetness is a highlight in this coffee, filling the cup with maple syrup and caramel apple. Almost no bitterness is present, though semisweet chocolate and nuts lend complexity to the brew. In the finish a short but sticky acidity leaves the palate wanting more.

Brewing Evaluation
Brewing Details
Sweet fruit and floral complexities entice the nose and a smooth and mellow body sits lightly on the tongue. The acidity comes up front with a pop of intensity but quickly rounds into a sweet candy-like presence. Bitterness is low, presenting itself like a lightly dry wine. The aftertaste is very clean and lingers with simple sweetness.
