Cupping Evaluation

Cupping Details

At first it smells of brown sugar, but the break brings forth green apple with a hint of somethings savory. Medium in body, it has a drying quality with a touch of chalkiness. The green apple returns in the flavor, alongside bright lemon and apricot. It’s gentle sweetness is reminiscent of dates and semi-sweet chocolate. It settles into low tones of oak, finishing off with short tannic notes.

Brewing Evaluation

Brewing Details

Sweet and fruity, this coffee opens with notes of maple, and dark grapes. Its medium body shifts and turns a bit on the palate. A low glow of tart cranberries and grapes makes way for sugared raisins and sweet maple. It is grounded in flavor with heavy tones of oak and dark chocolate, laced lightly with bran. It lingers, surprisingly bright and dry, settling into hints of baking spices and salted caramel.
