Cupping Evaluation
Cupping Details
The aroma holds rich notes of nutmeg, cedar, and toffee. Smooth on the palate, the body is medium in weight with a relatively full presence. Green apple acidity hits the tongue light and subtly, with strawberry, butter caramel, and bitter melon showing throughout the cup. Sweetness is above average and helps bring balance to a dark chocolate bitterness, which turns into cocoa in the finish.

Brewing Evaluation
Brewing Details
This Rwanda surprised us in the brew. While the aroma was markedly less intense, it smelled sweet and herbaceous. The first sips revealed a smooth and creamy texture gliding over the tongue. The acidity became more lively, juicy, and fruity to our senses. Sweetness was a highlight, seeming almost candy-like and intense. This brew had very little bitterness. Warm baking spices add a deep complexity that finished clean and leaves the you wanting another sip.
